Which count you actually want
The plain difference is the exclusive count: it answers "how many days from A to B" and treats the start day as day zero. The third figure counts both end days, which is what you need whenever the two dates are themselves the events - a two-day conference that opens on the 3rd and closes on the 4th is two days, not one.
